I believe that it is possible to train your cat to stop biting your hand through clicker training and to get to the stage where your cat perceives your hand is a friendly object bringing pleasure which should prevent him associating it with something hostile and which needs to be attacked. If however your cat is biting or handing play in the best way to avoid that is to dangle an object other than your hand in front of him to play with!
